Carrot Casserole

2 cup carrots; mashed cooked
2 tablespoon low-fat process american cheese (1/; 2 oz)
1 egg
1/2 cup skim milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 vegetables cooking spray

Combine all ingredients, except cooking spray; stir well. Pour mixture into a 1 1/2 casserole dish coated with cooking spray. Bake at 325F for 40 minutes or until thoroughtly heated.
