Export Format Boiled Raisin Muffins breakfast, diabetic, fruits 1 cup seeded raisins 1 cup brown sugar; or 1/2 c splenda 2/3 cup shortening; + butter mixture 1 egg 1 teaspoon soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 2 cup flour Directions Simmer raisins with just enough water to cover them for 20 minutes.Cool. Cream butter and shortening mixture. Add egg and sugar and beat well. Add raisins and the water they simmered in to creamed mixture and stir. Add the dry ingredients and stir. Put in muffin tins about 2/3 full and bake in oven at 350 degrees until done about 20 minutes. Note For unsweetened I use 1/2 cup of splenda sweetener as my husband is diabetic.
